CABERNET SAUVIGNON 2020
The 2020 season was a shorter growing season characterised by a slightly drier winter followed by a moderate summer growing period. We had some rainfall during ripening and a lack of the usual hot spells during this period. Our 2020 grapes were hand harvested earlier than usual, in mid February.
The grapes were de-stemmed and crushed into an open concrete fermenter, with multiple daily punch-downs, daily pump-overs, and fermented dry at constant temperature. Malolactic fermentation was completed in stainless steel tank.
The wine was matured in a controlled mix of older and re-manufactured French oak barrels for 18 months to achieve a softer, more integrated tannin profile.
Medium bodied showing dark fruit, vanilla, aniseed, cedar notes, a slight leafiness, and balanecd oak. Tannins are soft and well integrated, with a lingering after taste.
This wine can be enjoyed now, and will benefit from bottle maturation up to 8 years.
